French company Esprit du Sel is a world leader in the production of Grey sea salt fleur de sel's dark-hued island cousin collected from the bottom of the salt bays. Located on the Island of R Esprit Du Sel represents about 15% of the total market for grey sea salt (approximately 2000-3000 tons per year). The French National Center of Culinary Art (CNCAC) has awarded the salt marshes of the Island of R with the French designation "Remarkable Site of Taste." Hand-harvested ("raked and gathered") during the summer season, grey salt contains 1-3% clay, which gives the crystals a warm pewter color and earthy flavor.
